Winter Comfort
This Finnish version of mulled wine features cardamom prominently—the spice that gives Nordic baking its distinctive character also transforms this warming beverage.
Components
- 750ml fruity red wine
- 100g caster sugar
- 8 cardamom pods, lightly crushed
- 4 whole cloves
- 2 cinnamon sticks
- Strip of orange peel
- 60g raisins
- 60g blanched almonds
Preparation
- Combine: Pour wine into large pot. Add sugar and all spices.
- Heat Gently: Warm over medium-low heat for 20 minutes—never allow to boil or alcohol will evaporate.
- Infuse: Let stand off heat 10 minutes for flavors to deepen.
- Strain: Remove spices and orange peel.
- Serve: Ladle into heatproof glasses. Add a few raisins and almonds to each serving.
Tradition: Guests eat the wine-soaked raisins and almonds from the bottom of the glass.
