Summer Simplicity
This effortless no-bake cheesecake combines zesty orange with aromatic cardamom for a refreshing dessert that requires only refrigeration—perfect for warm weather.
Components
- 75g butter
- 150g digestive biscuits, crushed fine
- 200g full-fat cream cheese
- 125g condensed milk
- 1 teaspoon ground cardamom
- 2 tablespoons muscovado sugar
- Zest and juice of 1 large orange
- Whipped cream and orange segments for serving
Method
- Prepare Base: Melt butter. Combine with biscuit crumbs. Press firmly into 15cm loose-bottom tin. Refrigerate.
- Make Filling: Beat cream cheese until smooth. Add condensed milk, cardamom, sugar, orange zest and juice. Beat until combined.
- Assemble: Pour filling over chilled base. Smooth top.
- Set: Refrigerate minimum 4 hours, preferably overnight.
- Serve: Remove from tin. Top with whipped cream and orange segments.
Make Ahead: This cheesecake improves after overnight refrigeration as flavors meld.
