A Holiday Essential
These olive oil cookies, fragrant with orange and cardamom, are a Greek Christmas tradition. Dipped in honey syrup and coated in chocolate, they're impossibly delicious.
Cookie Dough
- 150ml extra virgin olive oil
- 100ml fresh orange juice
- 15g caster sugar
- 200g all-purpose flour
- 50g fine semolina
- ¼ teaspoon baking soda
- ½ teaspoon ground cardamom
Spiced Honey Syrup
- 200g caster sugar
- 150ml water
- ½ orange, roughly chopped
- 4 cardamom pods, cracked
- 3 tablespoons quality honey
Method
- Mix Dough: Whisk olive oil, orange juice, and sugar. Add dry ingredients to form soft dough.
- Shape: Form into oval shapes. Place on parchment-lined trays.
- Bake: Place in preheated oven at 180°C for 20-25 minutes until golden.
- Make Syrup: Simmer all syrup ingredients 5 minutes. Remove from heat, cool slightly.
- Dip: While cookies are still warm, dip in syrup for 10-15 seconds.
- Finish: Optionally dip in melted dark chocolate. Cool completely before serving.
