Breakfast Transformed
This aromatic granola brings Middle Eastern flavors to your morning routine. The cardamom, saffron, and dates create clusters that perfume your entire kitchen.
Components
- 300g rolled oats
- 100g mixed nuts (almonds, pistachios, cashews), roughly chopped
- 100g dates, pitted and chopped
- 80ml honey or maple syrup
- 60ml coconut oil, melted
- 1 teaspoon ground cardamom
- Large pinch saffron, steeped in 1 tbsp warm milk
- ½ teaspoon salt
- 50g unsweetened coconut flakes
Method
- Preheat: Set oven to 160°C. Line large baking tray.
- Combine Wet: Mix honey, coconut oil, saffron milk, cardamom, and salt.
- Combine Dry: Toss oats and nuts in large bowl.
- Mix: Pour wet over dry, stir until evenly coated.
- Bake: Spread on tray. Bake 30-35 minutes, stirring halfway, until golden.
- Add Extras: Fold in dates and coconut while still warm.
- Cool: Cool completely on tray for clusters to form.
- Store: Keep in airtight container up to 2 weeks.
